I am so blessed. I have a husband who is willing to try all sorts of new stuff. Remember when I served him a chocolate cake made with black beans?
Recently, I found a recipe for a cauliflower pizza crust. Of course, if I told my cauliflower-hater of a husband that this “new recipe” included three ingredients with the basis being this detested vegetable, I’m sure he wouldn’t have desired a bite of it! However, I didn’t tell him what it was made of, and he ate away and had zero idea.

Now, according to Beth from eat.drink.smile., this pizza only serves 2 people. I used a whole head of cauliflower (about 3 cups), and it made a large 8-piece pizza, and a smaller, round, 2-serving pizza. Of course, I guess you could have smaller servings if you made this a thicker pizza crust, and I’m game for trying it different ways, but I don’t think I’d want it any thicker.
1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil (optional) (I didn’t use this.)
pizza sauce, shredded cheese and your choice of toppings*
Ricing a head of cauliflower really just involves cutting up the head of cauliflower like you would for a veggie tray into little florets. Then, you add to the food processor and process them until they’ve been pulverized into little grain-looking pieces. You’ll have to keep checking and moving around the cauliflower in the mixer, because the moisture in the vegetable makes it hard to mix.
Once the cauliflower is all “riced”, place it in the microwave and cook for about 10 minutes. Now, the original recipe said to only cook it for 8 minutes to pull the moisture from the cauliflower, but I would cook it longer, because it was actually a little too moist.
From here, you’ll want to grease/flour your cookie sheet/pizza stone to avoid sticking.
